Prep:20 min › Cook:15 min Serves 4
- 2 cups store-bought fusilli pasta
- 5.3 oz thick chunks of ham
- 2 tsp Virgin olive oil
- 2 Eggs
- ¾ cup Light Cream
- 1 cup grated parmesan cheese
- 3 tbsp chopped chives
Heat the olive oil in a frying pan over medium heat. Add the chunks of ham and sauté, until golden.
Stir in the eggs and cream and stir continuously, until well combined. Add half of the cheese in the sauce. Simmer for 2 minutes and remove from heat.
Meanwhile, in a large saucepan add water and pinch of salt. Bring the water to a boil and add the fusili pasta. Read the cooking time on the package and cook accordingly. Once the pasta is al dente, move aside, drain it and bring back to the saucepan.
Place the pan with drained pasta on medium heat. Add the sauce to the pasta and toss to combine. Cook for 2-3 minutes.
Top with chives and sprinkled cheese.
